If you haven’t noticed by now, I love food, especially anything sweet. So, I was so excited to find out that International Waffle Day was March 25. It originated in Sweden. It is a tradition that is often celebrated in Sweden, Norway and Denmark. It is called Våffeldagen. In Swedish Vårfrudagen, means “Our Lady’s Day” (the Feast of the Annuciation), which was celebrated on March 25 before waffles were even around. However, because the two terms sounded so close to each other, over time it became known as Waffle Day in Sweden and they celebrated by eating waffles. In the United States, we celebrate National Waffle Day in August. So, if you are looking for another reason to eat waffles, you can celebrate in March and August now. Also, just in case you would like to try and make some Swedish Waffles at home, you might try the following recipe:

Våfflor (Swedish Waffles)

Ingredients

  • 1 2/3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2-1 teaspoon ground cardamom
  • 1 teaspoon vanilla sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 6 tablespoons unsalted butter, plus more for greasing melted and slightly cooled

Instructions

  1. In a large bowl, whisk together the flour, sugar, cardamom, vanilla sugar, baking powder, and salt.
  2. Mix in the eggs and milk, followed by the butter.
  3. Preheat a waffle iron according to manufacturer's instructions. Grease the heated iron with butter. Pour in a ladleful of the prepared batter, about 1/4 cup. Heat until the waffle is cooked through and starting to turn golden. Transfer to a plate and repeat with remaining batter.
  4. Serve warm with desired toppings such as lingonberry jam, whipped cream, fresh fruit or powdered sugar.
