Mom’s Famous Rolls

With Christmas quickly approaching, I have started thinking about what I am going to cook for our holiday dinner this year. Have you started planning your holiday menu? Are there items on your menu you traditionally cook every year? I know when I was growing up I do not remember there ever being a Christmas dinner without my mom’s homemade rolls. Mom’s rolls were the best and EVERYONE in the family made a big to-do over them. One Christmas I decided to make my mom’s rolls for our family dinner with my husband’s side of the family. After that year it was pretty much mandatory I make the rolls for every future holiday dinner. So, if you are interested in serving up some pretty tasty rolls this holiday season feel free to give mom’s famous rolls a try!

Mom’s Famous Rolls

Ingredients:

2 cups whole milk

½ cup + 1 tablespoon sugar, divided

1/3 cup butter

2 teaspoons kosher salt

2 packages of active dry yeast, preferably bread machine yeast

2/3 cup warm water

8-9 cups all-purpose flour

3 beaten eggs

Instructions:

1. Combine milk, ½ cup sugar, butter and salt in medium saucepan. Heat over medium heat until butter is melted. Remove from heat and allow to cool to lukewarm temperature. (Hint: I usually rub some ice cubes along the sides of the saucepan or put the pan in a sink full of ice cubes to cool the mixture down.)

2. While the milk mixture is cooling, dissolve the yeast and 1 tablespoon of sugar in warm water and let stand for about 10 minutes. (If yeast does not bubble then you need to repeat this step.)

3. In a large mixing bowl, combine 3 cups of flour and milk mixture. Beat on low for 30 seconds, scraping sides of bowl constantly. Add yeast mixture and beat on high for 3 minutes.

4. Add beaten eggs. 

5. Stir in as much remaining flour as needed to form a soft dough. The dough should come away from the sides of the bowl, but it will still be sticky to your fingers when you touch it. Place the bowl in a warm place and cover with a clean towel; allow to rise for 1 hour.

6. Punch down dough. Lightly flour your work surface and turn dough out onto surface and divide in half.

7. Spray two 9 X 13 glass pans with cooking spray. Roll first portion of dough into a rectangle and then cut into 12 equal-sized pieces. Shape each piece into a ball and place in prepared pan. Repeat for remaining dough.

8. Cover each pan with a clean cloth and allow it to rise in a warm place for approximately 30 minutes. Preheat your oven to 375°.

9 Bake for 15-18 minutes until golden brown.

10. When they are done, remove from the oven and rub a stick of butter over the tops of the rolls.
